Golden Couscous Salad
Ingredients:
- 2 cups of couscous
- 2 cups of low sodium chicken broth
- 1/3 cup olive oil
- Juice of 1 lemon
- 1 teaspoon turmeric
- 1/2 cup mint chopped
- 1 cup flat leaf parsley chopped
- 1/2 cup basil chopped
- ½ cup pistachio meats
- ½ cup golden raisins
- ½ cup feta cheese
- Fresh ground pepper
- Kosher Salt (optional, but if you add pistachios that are salted I often omit additional salt)
Directions:
1. In a microwaveable bowl add two cups of couscous and two cups of chicken broth (or water) and cook for 5 minutes. Once cooked, remove from the microwave and fluff with a fork. Set aside to cool.
2. Once cooled completely, add your turmeric chopped parsley, mint and optional basil. Add the juice of one lemon, olive oil and pepper. Stir. Then add your pistachios and golden raisins and stir. If your nuts are salted don't add additional salt. If nuts are unsalted then add some kosher salt to taste. Toss all ingredients together and before serving sprinkle with feta cheese and a drizzle of olive oil.
3. Feel free to add more of any ingredients you like. This recipe is so delicious and one of our favorites. It's great on its own, served over fresh greens or along side grilled chicken or salmon.
