Green Eggs & Ham Strata

Top o’ the mornin’ to ya folks! This strata (pretty much a fancy word for layered casserole) is delicious, nutritious (lots of greens) and super fun to celebrate St. Patrick’s Day. Try this recipe for breakfast, lunch or dinner, it is lovely alongside a simple green or fruit salad.

Ingredients:

  • 8 eggs
  • 1 cup milk
  • 1/2 loaf crusty sourdough, torn into pieces
  • 1 4 ounce package pancetta
  • 3 cloves garlic, finely chopped
  • 1 large or 2 small leeks, cleaned well and sliced
  • 1 can artichoke hearts (not in oil) drained and chopped
  • 2 cups fresh spinach
  • 1 1/2 cups parmesan cheese
  • 1/3 cup white wine
  • 1 teaspoon Dijon mustard
  • kosher salt & fresh ground pepper
  • Directions:

    1. Preheat oven to 375 degrees. Spray 9x13 baking dish with coconut spray or other non-stick cooking spray. Add the bread pieces and set aside.

    2. In a skillet, add your pancetta, you really don’t need any extra oil as the pancetta packs plenty. Cook about 3 minutes until lightly crisp. Then, add the garlic and cook about 2 minutes. Add your leeks and season with salt (lightly) and pepper. Cook about 5 minutes. Then add your white wine to deglaze your pan. Then add your artichokes, two cups of spinach, mix ingredients well and let sauté with lid partially cracked about 5 minutes.

    3.In a separate bowl, mix your eggs, milk, mustard, salt and pepper.

    4. Add your pancetta and greens mixture to your casserole dish and spread evenly over bread. Then, pour your egg mixture over the entire casserole. Then, top with 1 ½ cups of parmesan. Bake uncovered for 30 minutes.
