Maple Harissa Roasted Cauliflower, Delicata & Chickpeas
Directions:
1. Preheat oven to 400 degrees. Prepare your sheet pan with foil. Cut cauliflower in florets. Cut delicata squash length wise and scoop out seeds and cut into crescent slices. Drain and rinse can of chickpeas.
2.Add cauliflower, delicata and chickpeas to a large bowl. In a small bowl mix together olive oil, harissa and maple syrup. Drizzle sauce over veggies and toss, sprinkle with kosher salt and fresh ground pepper.
3. Pour veggies onto sheet pan and roast for 30 minutes. Arrange veggies onto serving dish and top with feta and flat leaf parsley.
