Apple & Persimmon Crisp with Sweet and Spicy Pecan Crumble

  • 4 Fuyu persimmons
  • 2 large Fuji or Honeycrisp apples
  • 1 tablespoon lemon juice
  • 1/2 cup coconut sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons flour (for fruit)
  • 1 1/2 cup flour (for topping)
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ground cloves (optional)
  • 1/4 teaspoon salt
  • 1 1/2 sticks unsalted butter
  • 1/2 cup Trader Joe's Sweet & Spicy Pecans, finely chopped
  • Directions:

      1. Preheat oven to 350 degrees. Cut fruit into small pieces, leaving skin on. Put fruit in a large bowl and toss with lemon juice, coconut sugar, flour, nutmeg, cinnamon, vanilla extract and clove. Set aside.

      2. In another bowl mix together flour, oats, brown sugar, a little more cinnamon, salt and butter. Mix well with mixer or with your hands. Then, add in Trader Joe's Sweet & Spicy Pecans.

      3. Spray 9x13 casserole dish with coconut spray. Then, add all of your fruit mixture and juices to dish. Then top with crumble topping.

      4. Cover with foil and bake for 45 minutes. Cook uncovered for the last 15 minutes until topping is golden brown and fruit is bubbling.
