Roasted Beet & Apple Salad with Goat Cheese and Pistachios
Directions:
1. If you are roasting your own beets. Preheat oven to 425. Clean beets well, then rub with olive oil with skin on. Arrange beets in casserole dish or on sheet pan. Cover the entire tray with foil and make sure it is well sealed. Then, roast for 45 minutes. Once done, set aside to cool completely before assembling.
2. On your serving dish, arrange beets and apple slices. Drizzle with olive oil and pomegranate vinegar. Season with kosher salt and fresh ground pepper. Then top with goat cheese, pistachios and micro greens. We didn't give measurements on these items so please feel free to use as much as you would like. Enjoy!
