Simple Greek Lemon Chicken Soup

Directions:
1. Saute garlic and onions in olive oil until translucent and tender. Add in your shredded chicken and toss. (For the shredded chicken I do 2 options 1. buy a rotissere chicken already prepared or 2. Before you make the soup toss 3 breasts into a crock pot and cook on high for 4 hours, shred, toss with olive oil and kosher salt then set aside until you prepare the soup.
2. Add your chicken broth, lemon zest, lemon juice, cayenne, kosher salt and fresh ground pepper. Let simmer together on the stove at least 10 minutes. Then, add your orzo put your lid on the pot and let cook for another 8-10 minutes until orzo is tender.
3. Laddle soup into bowls. Top with fresh mint, parsley, drizzle of olive oil and feta (this is my fav part). Enjoy!
