Margarita Chicken Fajitas
This recipe is from Chrissy Teigen's cookbook, Cravings. However, I loved being able to show you guys how to make this dish using all (except one) Trader Joe's ingredients.

Directions:
1. Combine all chicken marinade ingredients in a bowl and mix well. Pour over chicken and let chicken marinade for 4 hours or up to one day.
2. Preheat oven to 250 degrees. When you are ready to get cookin, heat your cast iron skillet to a medium high heat with a little bit of olive oil. Remove chicken from marinade and add chicken to skillet and cook for 5 minutes on each side. (Save one cup of the marinade we will be cooking this down). Once cooked all the way through, move chicken to oven safe dish and cover dish tightly with foil. Put in prepared oven to stay warm while you finish the veggies.
3. In a seperate sauce pan heat marinade to a boil then turn down to a simmer. In the skillet you cooked the chicken in, add your red onion and saute about 5 minutes. Then add your mushrooms and let cook until liquid releases and evaporates. Then add spinach until it cooks down and also evaporates. Then add in cooked down marinade to the veggies and saute until all liquid has reduced.
4. Once veggies are done, bring chicken out of the oven and shred. Assemble tacos with chicken, veggies, cheese and your choice of additional toppings, tomato, avocado and cilantro.
