Grilled Citrus Pork Tacos with Avocado & Mango Salsa

Ingredients:

  • 1 pork tenderloin
  • 2 cups orange juice
  • garlic powder
  • kosher salt and fresh ground pepper
  • tortillas
  • shredded cheese
  • fresh cilantro
  • 1 jalapeno
  • 1/2 red bell pepper
  • 1/2 red onion thinly sliced
  • juice 1/2 orange or one cutie
  • juice of 1 lime
  • 1 teaspoon honey
  • kosher salt and fresh ground pepper
  • Directions:

    1. Put pork tenderloin in a ziploc bag. Pour in orange juice, kosher salt and fresh ground pepper. Option to add fresh herbs here we sometimes use rosemary or for this recipe cilantro would be nice to add. Let marinade for at least 4 hours, up to 1 day.

    2. When preparing to grill, heat to a medium high heat. Remove pork from marinade and discard juice. Grill pork tenderloin for about 15 minutes on both sides. The sugar from the orange juice gives the pork a great char.

    3. While the pork is grilling. Mix your salsa. Combine mango, bell pepper, onion, jalapeno, cilantro, honey, salt, pepper and citrus to a bowl and mix well. Let stay room temp to merry until serving. Trader Joe's does have a premade mango salsa you could use, however, we love the freshness of this easy version.

    4. Once pork is done, bring in and let rest before cutting. Cut pork into taco size pieces. Assemble in tortillas layering pork, cheese, salsa and top with avocado.
