Buffalo Chicken Salad
Buffalo Chicken Salad
As you guys know, I am always looking for an opportunity to put blue cheese on anything! Sometimes a fork is just enough. I whipped up this salad the other day after work and was excited about it. Mix and match any of the ingredients, feel free to mix the dressing ingredients all together or just drizzle everything on top like I did.
Ingredients:
- greens
- tomatoes
- carrots
- green onion
- cilantro
- cucumber
- corn
- crumbled blue cheese
- shredded chicken (use a rotissere chicken or grill some chicken tenders, or prepare your chicken breasts in the crockpot on low for 6 hours or high for 4 hours and then shred (no liquid needed in the crockpot)
- drizzle olive oil
- juice of 1/2 lemon
- 2 tablespoons buffalo sauce
- 2 tablespoons cilantro & chive yogurt dip (this is my healthy new "ranch dressing" alternative
- fresh ground pepper
- dried dill, optional
Dressing
Directions:
1. Shred your chicken (if done in crockpot) set aside
2. Arrange salad ingredients on plate. Top with shredded chicken and blue cheese crumbles. Drizzle all of the toppings or mix them all together into a dressing.
