Autumn Harvest Pasta Sauce
Autumn Harvest Pasta Sauce *Many of you may have purchased the Harvest pasta sauce this fall from Trader Joe's. I did, too, and really enjoyed it! However, the sauce didn't last long on the shelf as it was a seasonal item so I whipped up my own recipe of the same sauce. I hope you guys enjoy this recipe and use it all throughout the fall and winter seasons. Ingredients: Directions: 1. Heat oil in a large saucepan. Add the onion and garlic and sprinkle wth kosher salt. Saute until translucent. 2. Put your cubed butternut squash in a microwaveable bowl, microwave for 5 minutes then mash with a fork. Set aside. 3. To your saucepan add the pumpkin puree, butternut squash, tomato sauce, honey, kosher salt, and chicken broth and combine well. Stir on medium heat until the sauce begins to bubble. Turn the heat to low and simmer 10 minutes, stirring occasionally. 4. At this time, finely chop your sage and rosemary, and then add to your saucepan. Then add the cinnamon and coconut milk stir well. Taste and add additional salt and pepper to taste. *We used this sauce for our stuffed spaghetti squash recipe which we will be sharing on Wednesday. However, you can do so many things with this great sauce! Drizzle over your favorite pasta, make a harvest lasagna or serve over other squash varieties.
