Mom's Savory Stuffing
Ingredients:
- 1 loaf sliced sourdough bread with crust, cubed
- 1 package hot or sweet Italian sausages, casings removed
- 4 small leeks or 2 large leeks, cleaned and chopped
- 1/4 cup dry white wine
- 3/4 cup butter, divided
- 3 pounds Granny Smith apples, peeled (optiona) and cubed
- 2 pounds parsnips, peeled, cubed
- 3/4 cup packed fresh sage leaves
- 1/2 cup low sodium chicken broth
Directions:
1. Preheat oven to 325 degrees. Place cubes of bread on baking sheet (you might need 2 sheets), and toast lightly for 20 minutes.
2. Sauté sausage in a large skillet over medium-high heat until cooked through and browned, breaking into pieces with spoon, about 15 minutes. Using slotted spoon, transfer to large bowl; add bread.
3. Add leeks to the skillet you just took sausage out of and sauté until golden brown, about 10 minutes; transfer to bowl with bread. Melt 1/4 cup butter in same skillet over medium-high heat. Add apples and and parsnips and sauté until tender, about 10 minutes. Then mix into stuffing. Then add another 1/4 cup butter sage to saucepan and sauté until dark green, about 2 minutes. Mix sage and butter into stuffing. Season with salt and pepper.
4. Preheat oven to 350 degrees. Spray casserole dish with coconut spray. Transfer stuffing to baking dish and drizzle with 1/2 cup chicken broth. Cover with foil. Bake for 30 minutes covered and then 10 more minutes uncovered.
