Street Corn Salad

Ingredients:

  • 4 ounces, pancetta
  • 2 shallots, sliced
  • 2 cloves garlic, chopped
  • 2 cups frozen corn
  • kosher salt and fresh ground pepper to taste
  • 1 jalapeno, sliced
  • 1 tablespoon fresh cilantro
  • 2 teaspoons paprika
  • 1 tablespoon finely grated parmesan
  • 1 tablespoon fresh mint
  • Directions:

      1. Heat skillet to a medium high heat, add pancetta and let pancetta get crispy. Once crispy, add in your shallots and garlic and saute until tender.

      2. Add in corn and toss well with pancetta, shallots and garlic. Season with kosher salt and fresh ground pepper to taste. Let cook about 3 minutes. Add in jalapeno and let cook another 2 minutes. Remove from heat and add in cilantro and toss well.

      3. Transfer corn to serving dish, sprinkle with paprika, fresh parmesan and top with fresh mint.
