Melon Salad with Feta & Spicy Pepitas
Ingredients:
Directions:
- 1 cup pepitas (raw, shelled, unsalted pumpkin seeds)
- 1 teaspoon coconut sugar
- ½ teaspoon cayenne pepper
- ½ teaspoon garlic powder
- 1 teaspoon soy sauce
- 1 teaspoon olive oil
1. Follow cooking directions on farro. Cook, season with olive oil, salt and pepper and let cool. Cube watermelon and cantaloupe, slice cucumber and mint.
2. For dressing, mix together fresh orange and lime juice with olive oil kosher salt and fresh ground pepper. Feel to free to add cayenne or smokey paprika here.
3. To assemble, arrange arugula on plate. Top with farro, then melon, cucumber, feta, pepitas and fresh mint.
Spicy Pepitas
Directions:
1. Preheat oven to 350 degrees. Line a large sheet pan with foil. Scatter pepitas on sheet pan. Roast plain for 10 minutes.
2. While peptias are roasting, in a small bowl, combine sugar, garlic powder, olive oil, soy sauce and cayenne pepper and set aside.
3. Remove pepitas from oven and toss in flavor mixture. Pour pepitas back on prepared baking sheet and bake for 5 minutes, or until pepitas are browned.
