Everything (but the bagel) Wedge Salad
Ingredients:
Directions:
1. Clean and cut iceberg lettuce into wedges. Slice cherry tomatoes length wise. Thinly slice red onion and set in white wine or white vinegar with salt for at least ten minutes, then drain. Chop chives and dill and set aside.
2. In a skillet at medium high heat, add pancetta and brown until crisp. Then drain on a paper towel and let cool.
3. Thin 1 cup of Trader Joe's Blue Cheese dressing with 2 tablespoons of white vinegar or lemon juice. I also add dried dill, garlic powder and fresh ground pepper to mine. But if you enjoy the dressing as is, that is just fine!
4. Assemble by arranging wedges on a platter. Drizzle with dressing. Then layer with tomatoes, onions, blue cheese crumbles, pancetta, Everything (but the bagel) Sesame Seasoning and top with fresh herbs.
