Chicken Lettuce Wraps
This recipe is so versatile and delicious. We found this recipe from Chrissy Teigen's new cookbook, but adjusted some measurements and ingredients to fit our preferences. You can really make this recipe with chicken breast (cut into pieces), ground chicken or ground turkey. It is a great base to get you started, keep in mind some but not all of the Asian ingredients can be found at Trader Joe's!
Ingredients:
- 6 cloves garlic, finely chopped
- 2 tablespoons olive oil
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- 2 tablespoons sweet chili sauce
- 2 tablespoons Sriracha
- 2 tablespoons hoison sauce
- 1 tablespoons rice wine vinegar
- 2 teaspoons fresh minced or grated ginger
- 1 lb. chicken (breasts cut into pieces or ground) or ground turkey
- 8 scallions, thinly sliced
- 1 box of white mushrooms, cleaned and finely chopped
- 2 carrots, peeled and cut into pieces
- 1 can waterchestnuts, drained and chopped
- 1 red bell pepper or jalapeno, seeded and finely chopped
- 8 romaine leaves, butter lettuce, cabbage or iceberg lettuce cups
Directions:
1. Mix together your chili sauce, hoisin, soy sauce, Sriracha, sesame oil, vinegar, and ginger.
2. In a large skillet, heat olive oil over medium-high heat. Add garlic to skillet and saute. When simmering-hot, add your carrots, bell pepper and mushrooms and cook for about 5 minutes until liquid from mushrooms evaporates. Then add your chicken and cook, until browned, about 6 to 8 minutes.
3. Add half of your sauce to skillet and mix throughly making sure veggies and meat are well coated. Transfer mixture to serving dish. Arrange lettuce cups on plates and start filling with mixture. Top with sesame seeds or peanuts, and drizzle remaining sauce and Sriracha on top!
