Sheet Pan Chicken Pitas
Ingredients:
- 12 boneless skinless chicken tenders or breasts cut into strips
- 1 tbsp ground cumin
- 1 tbsp turmeric powder
- 1 tbsp ground coriander (not available at TJ's)
- 1 tbsp garlic powder
- 1 tbsp paprika
- 1/2 tsp cayenne pepper
- 1 lemon, juiced
- 1 yellow onion, sliced
- 1/3 cup olive oil
- 6 pitas
- fresh tomatoes, chopped
- fresh arugula
- tzatziki
- feta cheese
Directions:
1. Preheat the oven to 425 degrees. Rinse tenders and then pat dry. Spray baking sheet with nonstick spray, then arrange tenders on sheet pan. Thinly slice your onion and also spread onto sheet pan.
2. In a bowl mix together your olive oil, lemon, cumin, coriander, turmeric, garlic powder, paprika and cayenne
3. Then pour your marinade over the chicken tenders and onions directly on the sheet pan and mix well.
4. Roast for 30-45 minutes at 425 degrees. You can warm pitas toward the end of your cook time in the oven or microwave.
5. Assemble the chicken in your pita pockets, layer with tzatziki, arugula, tomatoes and feta.
