Brown Sugar & Rosemary Spiced Roasted Pumpkin Seeds
Ingredients:
- 2 cups pumpkin seeds in shell, unsalted
- 1/2 tsp kosher salt
- 2 tbsp olive oil
- 1 tsp fresh rosemary, finely chopped
- 3 tbsp brown sugar
- 1 tsp smoked paprika
- 1 tsp cinnamon
- 1 tsp cumin
- 1/4 tsp cayenne pepper
- coconut spray
Directions:
1. Heat oven to 350 degrees. Line sheet pan with foil, spray with coconut spray. Then evenly lay pumpkin seeds on sheet pan and spray pumpkin seeds with coconut spray, and drizzle with olive oil. If you are roasting seeds right out of a pumpkin you will not need to moisten the seeds as much, we used pumpkin seeds out of a bag so that is why we used both extra coconut spray and olive oil.
2. While pumpkin seeds are roasting for 15 minutes, mix together your salt, sugar, cinnamon, cumin, paprika, cayenne pepper and rosemary
3. Remove pumpkin seeds from oven and toss with seasoning. Serve warm immediately or set in bowls for a great snack at a harvest gathering. We also love sharing these seeds as a gift in a mason jar.
